Lovely pink rhubarb from Yorkshire that I found in New Covent Garden Market. I cook it with lemon zest and juice, fresh ginger and stem ginger. Stem ginger was a Sunday treat for my Victorian grandfather: he used to fork out a lump and slice it up very carefully.
I was hard at it in January and February making Seville marmalade – see the artisan way of sterilising jars! Luckily the oranges freeze well, so I can save some of them for your orders later in the year.
